COAGU'CAPT : SENSOR IN VAT FOR MONITORING REAL-TIME MILK COAGULATION

Résumé

INTRODUCTION/CONTEXT This COAGUCAPT project, supported by the CNIEL, concerns the cheese industry and in particular the milk coagulation stage. OBJECTIVE The objective for the cheesemaker is to obtain the most stable production quality over time and to increase manufacturing yield thanks to precise qualification of the milk clotting time (transition from a liquid state to a gel state) and a state of firmness of the curd. MATERIALS AND METHODS The technology concerns the development of an in-situ sensor, immersed in the vat, and its on-board electronics based on a principle of generating a localized, non-propagating acoustic wave. This wave is generated by a piezoelectric transducer glued to a stainless steel membrane. The rigidity of the gel during coagulation (curdled milk) induces mechanical damping on the membrane making it possible to measure the electrical properties of the piezoelectric transducer and extract rigidity parameters from the gel. RESULTS AND DISCUSSION Thus, the first sensor prototype produced within the COAGUCAPT project allows in-situ online monitoring of the evolution of the firmness of the milk matrix, with reproducible and real-time measurements of the response of the sensor immersed in a cheese making vat. After the introduction of the coagulation agent the frequency shifts allow access to: - the clotting time, - the real-time monitoring of the maximum coagulation speed, - the increase in firmness of the gel for cutting time determination. CONCLUSION/PERSPECTIVES A second prototype is in production to evaluate these final performances, the last stage of the COAGU'CAPT project. The sensor will be tested at different levels: in the laboratory, in the experimental cheese-making plant and in the cheese industry (reproducibility, sensitivity, different cheese-making technological conditions, comparison with existing sensors, operation in a production environment…). Finally, the real-time processing of the data will make it possible to predict some parameters chosen by the cheesemaker.
